Rainbow Smoothies are magical.
This is because they are a delicious blend of fruits, mixed with a bit of veggies that you can’t taste. Rainbow Smoothies are perfect for picky eaters. It also gives you a chance to chat about the ‘Power of a Recipe’ at your own counters and how it can help us get healthy foods in our bodies we often won’t eat alone.
My own crew has had an extensive list of foods that they wouldn’t eat over the years and through their various ages when they were little I became the queen of ‘sneak and tell.’ I would sneak the foods in they didn’t like, but once they gave me a ‘thumbs up’ on a recipe, I will tell them what they were eating to help open their minds to that food.
The Rainbow Smoothie gave me a lot of room for conversation in regards to spinach or kale. What I have discovered with my family is that when I use baby leaf spinach or baby leaf kale, the nutritional value is the same, but the bitterness of the larger leaf and after taste don’t exist.
Rainbow smoothies
Ingredients:
• Red = 2 cups strawberries, fresh frozen
• Purple = 6 oz. blackberry yogurt, low fat
• Blue = 1 cup blueberries, fresh frozen
• Green = 1 cup spinach, fresh baby leaf
• Yellow = ½ of a fresh lemon
• Orange = 1/2 navel orange
• Pot of Gold = 2 tablespoons honey
• Dash of Magic = 1 teaspoon vanilla extract
• 1 cup of milk
Instructions:
Add the strawberries, yogurt, blueberries and spinach into the blender. Make certain that there are no seeds in your lemons. If you don’t have a lemon squeezer, the juice can be squeezed out by hand, which is way more fun for kids! Simply squeeze the rind together, twisting slightly to release the juice into the blender. Repeat and squeeze the juice form the orange into the blender as well. Add in the honey, vanilla and milk. Blend and serve. This recipe makes a delicious and thick smoothie to share.
Optional:
The kids won’t even taste the spinach in the Magical Rainbow Smoothie. If you have a picky eater, simply put the spinach into the blender with the frozen strawberries and milk already in before you invite them to the counter to help add in the other ingredients.
