Last month we made frozen yogurt cakes for Mother’s Day, a treat that is right up my alley. This month we get even richer, serving up a Snickers ice cream pie for Father’s Day.
The dad in our house is an ice cream lover who will tolerate frozen yogurt for me, but when it comes to his special day, it’s all about the real deal! I love this recipe, because it’s kid friendly and, depending on their age, they can almost do this entire recipe from beginning to end.
Snickers Ice Cream Pie
Snickers candy bars, mini-size
Whipped topping
1 8-inch chocolate pie crust
2 cups vanilla bean ice cream
1/2 cup chopped peanuts
1/8 cup caramel sauce
1/4 cup chocolate syrup
Remove the wrappers of the Snickers candy bars and cut the bars into small pieces. You will need 1 cup of chopped candy.
Let the ice cream soften so you can stir it easily but it’s still in a thickened state. If it melts to a milk consistency, it’s too soft. Fold in the chopped Snickers, caramel sauce and chocolate syrup. Pour the mixture into the pie crust and freeze the pie for at least three to four hours.
Place the whipped topping into a lunch-sized sealable bag. Seal the top. Clip one corner of the bottom of the bag so that you can pipe the whipped cream onto the edge of the pie.
Remove the pie from the freezer. Drizzle caramel and chocolate syrup on top. Pipe the whipped cream around the edges and top off the pie with the chopped nuts. Continue to freeze the pie covered until you are ready to serve. The top of the ready-made pie shells can be turned upside down to create a dome-like enclosure.
- Lessons for Kids: A highlight in making this recipe is the concept of folding ingredients together. Folding is when a heavier mixture is combined with a lighter mixture by passing a spatula down through the mixture, across the bottom and up over the top. This process continues until all of the ingredients are combined.
