Back-to-school schedules mean crazy mealtimes are starting at our house, so we are turning our attention to quick and easy menu items, including – taco night! Check out my family’s favorite taco meat recipe with a little healthy hidden surprise, and then make a double batch, let it cool and have it in the freezer ready to thaw and warm on those super busy school nights ahead.

Taco Surprise
Traditional FlatOut Fold-its, or other flatbread
1 pound ground turkey
2 cups fresh spinach
1 pint grape tomatoes
½ cup onions, finely chopped
1 clove garlic
1 tablespoon cumin
1 ½ teaspoon chili powder
¾ teaspoon salt
½ teaspoon white pepper
Taco toppings: shredded sharp cheese, romaine lettuce, diced tomatoes, sour cream, taco sauce, black beans, corn, etc.
Cook the ground turkey in a frying pan; draining off any excess juices. Add the onions and a clove of fresh garlic to the meat and cook until tender, stirring frequently.
Finely chop the spinach in food processor. Puree the tomatoes in a food processor.
Add the spinach, pureed tomatoes and spices to the meat mixture. Stir and cook until the spices and other ingredients are evenly distributed and the mixture is hot.
Cut the flatbread portions in half and use each half like a soft shell taco. Fill the center with meet and add your favorite toppings. Enjoy a dinner with fresh vegetables in the mix the kids won’t even taste.
